Specialty & Ethnic Cooking Equipment
Ethnic and specialty menus need machines built around one product: shawarma and kebab grills, roti and panini presses, waffle cone bakers and charbroilers. These are specified from the product format, the output per hour and the cleaning routine between batches.

Specify the Duty Before Selecting the Model
Five decision points drive every specialty & ethnic cooking equipment specification:
- Product format and size — skewer, flatbread, cone or pressed sandwich dimensions
- Output per hour — set by heating surface, recovery and batch loading method
- Energy and siting — gas or electric; countertop footprint and clearance
- Cleaning between batches — removable parts and drainable grease collection
- Extraction requirement — grease-laden vapour needs specific hood capture

Specialty Types We Build
Each entry is a build-to-order configuration. Send the duty and utility conditions and we confirm the specification against them.
Shawarma, Kebab & Vertical Grills
Vertical grills are built around one product format. We supply the commercial shawarma machine and shawarma machine commercial unit for cones, the commercial kebab machine and kebab machine commercial unit for skewer and doner work, and commercial charbroilers for marked proteins. Output is quoted in kilograms per hour and assumes continuous slicing with the cone reloaded at the right interval.

Roti, Panini & Sandwich Presses
Contact presses and bakers are sized to the product rather than to a generic plate. We build the commercial panini maker and commercial panini machine for pressed sandwiches, the roti maker commercial machine and roti maker machine commercial for flatbread and chapati, and the waffle cone maker commercial unit for dessert service.

Specialty Questions
What determines shawarma grill output?
The heating surface and the stacking density, not the gas rating alone. Output is normally quoted in kilograms per hour, and it assumes the operator slices continuously and reloads the cone at the right interval.
Can these machines share a standard extraction hood?
They can, provided the hood is sized for grease-laden vapour and the filters are rated accordingly. Vertical grills and charbroilers release more grease than a griddle, so capture area and filter class should be confirmed before the line is fixed.
Are specialty machines available in electric versions?
Most are available in gas and electric, and the choice usually follows local utility cost and whether the site has ducted gas. Electric versions need the correct phase and a dedicated circuit for units above countertop rating.
