What is the safe hot-holding temperature for commercial food service?

International food safety codes require hot-held food to maintain a core temperature of at least 63–65 °C (depending on jurisdiction). Our holding cabinets are specified to hold at the setpoint ±2 °C across all shelf positions, verified by multi-point probe testing. Temperature should never be assumed from the controller display alone — probe verification at the core of the food item is part of any HACCP daily checklist.

How do I calculate how many holding cabinets I need for a banquet kitchen?

Start with your cover count, menu structure and service window. For 800 plated covers dispatched over 30 minutes, calculate backward: how many plates must be staged at minute zero? A single heated holding cabinet holds approximately 64–128 plated covers depending on GN format. Then add 1–2 cabinets for backup and hot bulk food holding before plating. The bottleneck is rarely the cabinet count — it is the transport route and lift availability.

Can food be rethermalised in a holding cabinet?

No. Holding cabinets are designed to maintain temperature, not to raise it. Food must enter the cabinet at or above the target holding temperature. For cook-chill or cook-freeze operations, a separate rethermalisation trolley or blast chiller/retherm unit is required before transfer to the holding cabinet. Using a holding cabinet for reheating creates a food safety hazard and will fail a health inspection.
