Commercial Fryers & Deep Fryers
Frying is specified from the peak portion count and the oil policy, not from the pan size on a catalogue page. Recovery time between baskets, tank shape, filtration and the available extraction decide whether a single tank holds the service or a twin-tank battery is needed.

Specify the Duty Before Selecting the Model
Five decision points drive every commercial fryers specification:
- Peak portions per hour — the number that sets oil volume and burner or element power
- Tank configuration — single, twin tank, double or large-capacity battery
- Oil handling and filtration — built-in filtration, drain valves and disposal method
- Energy and siting — gas, electric, LPG or propane; countertop, bench or freestanding
- Extraction and ventilation — hood capture above the fryer or a ventless filtration unit

Commercial Fryers Questions
Gas or electric fryer — which is cheaper to run?
Gas usually costs less per hour of frying where mains gas is available and stable, but it needs extraction and a gas-safe installation. Electric is simpler to site, easier for countertop units and often the only option in retail or ductless premises.
Why does recovery time matter more than tank size?
A large tank that drops 30 °C after each basket produces oily food all service. Recovery time — how fast the fryer returns to setpoint — determines throughput and oil life more than nominal litres.
What does a ventless fryer need to operate?
A ventless fryer carries its own filtration and catalyst, so no external duct is required. It needs a defined clearance, a filter service schedule and correct positioning away from open flame sources.
