How do I size refrigeration for a commercial kitchen?
Start from the production volume per meal period and the number of door openings, then add the delivery pattern. Undersized refrigeration fails during delivery days, not during quiet service, which is why recovery capacity matters more than nominal litres.
What ambient temperature can a commercial refrigerator work in?
Kitchen-rated units are typically designed for ambient temperatures up to 40 °C, but performance drops near that limit. If the unit sits beside cooking equipment, increase clearance and consider a higher-duty model rather than a larger one.
Display chiller or standard upright for front of house?
Display chiller where products must be seen and self-selected; upright where volume and stock rotation matter more. Display units cost more per litre and lose more cold air on every opening.
