Tilting Braising Pans for Batch Cooking

Commercial dutyFactory configurationExport documentation

Tilting braising pans (commercial tilting skillets / automatic stir-fry cookers) combine shallow frying, sautéing, braising, boiling and high-volume sauce, stew and batch meal production in one versatile vessel. The correct specification depends on batch mass, product viscosity, required heat transfer rate, discharge method and the utilities available at the site.

HSYL provides heavy-duty commercial tilting braising pans and planetary cooking mixers ranging from 200 L to 650 L capacity. Units feature planetary bottom/side scraping agitators to eliminate scorching on viscous foods, hydraulic 0–90° tilt discharge, and options for electromagnetic induction, high-efficiency gas or industrial steam heating. For dedicated bulk soup, stock and sauce boiling, compare with the Commercial Steam-Jacketed Tilting Kettle Series (100L–600L).

How to Specify the Right Configuration

DecisionWhat to Confirm
Batch volumeDefine the largest practical batch mass (kg) and number of batches required during the peak production window (200 L to 650 L class).
Product & processState whether the pan is used for sautéing, viscous sauces, meat braising, curry bases, stir-frying or high-sugar fillings.
Agitation requirementSelect non-stick planetary scrapers (revolution + rotation) for sauces, seasonings and thick purees to prevent bottom scorch.
Energy sourceConfirm 380V 3-phase electrical capacity (40–80 kW for induction), natural gas/LPG pressure, or central boiler steam availability.
Tilting methodPowered hydraulic 0–90° tilt discharge matches standard 200 L euro-bins, mobile totes or pump-transfer hoppers.
Vessel & cleanabilityStandard food-contact bowl in AISI 304; specify AISI 316 for acidic tomato/vinegar recipes; hydraulic arm lifts clear for wash-down.
Layout & ventilationCoordinate capture hood exhaust volume, floor drain trenching, and chef service clearance in front of the pouring spout.

Typical Applications

  • Central kitchen batch meal cooking
  • Factory, corporate and university canteens
  • Hotel banquet prep and bulk sauce production
  • Food processing plants (sauces, pastes, fillings, pre-cooked dishes)
  • High-volume Asian wok-style and Western stew batch cooking

Engineering & Procurement Notes

  • HSYL tilting braising pans and planetary cooking cookers standardise on 900 mm, 1000 mm, 1200 mm and 1400 mm bowl diameters, with batch capacities from 200 L up to 650 L.
  • Electromagnetic induction models achieve up to 90%+ thermal efficiency, cutting energy consumption by 40–50% compared to traditional atmospheric gas burners while keeping prep room ambient temperatures low.
  • Planetary agitators combine self-rotation (14–69 rpm) with planetary revolution (6.7–33 rpm) and food-grade PTFE spring-loaded scrapers to ensure zero blind spots and prevent surface caramelisation or sticking.
  • The category page targets commercial tilting braising pan procurement; specific SKU technical data sheets define final project voltages, breaker sizing and custom lid/hopper configurations.

Information Required for an Accurate RFQ

  • Application, menu or process and peak operating duty.
  • Required capacity, dimensions or custom fabrication drawing.
  • Available utilities and drainage/ventilation information where relevant.
  • Installation space, access route and floor plan if available.
  • Destination market and required compliance/documentation scope.
  • Required quantity, accessories, spare parts and target project schedule.

FAQ

Tilting Braising Pans for Batch Cooking Questions

How do I size a commercial deep fryer?

Use the peak batch load, baskets per hour, product type, oil displacement and required recovery between loads. Nominal tank litres alone are not enough.

Should I choose gas or electric?

Choose from the available utility capacity, local operating cost, required recovery, ventilation and the exact fryer configuration. Confirm the final utility schedule before production.

Does HSYL have single- and twin-tank fryer configurations?

The current CK-YZL-02 page publishes 23 L and 28 L single units and 23 L×2 and 28 L×2 configurations. The selected row must be confirmed in the quotation.

Why are the current fryer product pages under Serving Line Equipment?

That is the current site taxonomy. The recommended SEO architecture is to use this new Cooking Equipment category as the commercial hub while keeping existing SKU URLs stable unless a controlled migration is approved.
