Match the Fryer to Peak Service
A restaurant preparing fries throughout lunch has a different frying pattern from a canteen cooking large batches before a scheduled meal. Describe the busiest service period, including the food type, portion size, batches per hour and whether ingredients enter the fryer chilled or frozen.
When comparing a commercial deep fat fryer, look beyond nominal oil capacity. Ask for the selected model's basket dimensions, operating instructions and performance information relevant to your menu. These details help you assess how loading and recovery fit the service schedule.
Gas or Electric: Check the Site First
For an electric fryer, provide the available voltage, frequency, phase and electrical capacity. For a gas fryer, provide the fuel type and supply conditions. Include the proposed location and extraction arrangement with either option.
