The practical difference is duty cycle, construction, heat output and how the range integrates into a continuous cookline. For HSYL projects, selection should be based on menu, peak service load, fuel, module depth and adjacent equipment rather than the label alone.

Should I choose a commercial gas range or an electric range?

Choose from the utilities and cooking process. Gas is often selected for rapid high-heat line cooking where gas service and ventilation are available.
