Measure the Peak Return Load
Count plates, trays, bowls and utensils arriving during the busiest service interval. Record the time available to clear them and the proportion that needs pre-soaking or rewash. Keep the original units: plates per hour and racks per hour are different measures and cannot be compared without knowing the loading arrangement.
