To size refrigerators for restaurants, first test whether the busiest stock day fits the cabinet in the way staff must use it. An advertised litre figure measures a nominal volume; it does not tell you whether a delivery crate passes through the door, a prepared-food container clears a shelf or fast-moving ingredients remain accessible during service.
Build a peak-day inventory, then separate service stock
Use the day on which incoming deliveries and prepared stock overlap. For every container type, record its outside dimensions, how many are present at that peak and how often staff retrieve it. Put frequently accessed ingredients in a service-location group and reserve bulk or sealed stock for a store-location group. This avoids solving a cookline access problem by buying a larger cabinet across the room.
Check the openings and shelves before comparing litres

Reject a layout that fails a required container fit even when its nominal volume looks generous. If the stock fits only after changing shelf positions, ask whether those shelves are included and whether the arrangement remains within the manufacturer's load and airflow instructions.
Use the published E Series pair to see why volume can mislead
HSYL's E Series upright refrigerator range lists the EDTR24-1 direct-cooling reference at 500 L nominal capacity and the ECTR24-1 air-cooling reference at 425 L, while both are shown with an external frame of 610 × 760 × 1950 mm. The smaller published litre figure does not establish that one cabinet is worse for a restaurant's specific stock. Door access, shelf arrangement, airflow and the actual containers may change the answer. Recheck the current model sheets before using either figure in a quotation.
Close the operating and installation checks
Ask how the chosen cooling method, door-opening pattern and room conditions affect use and maintenance. Agree with the site's food-safety lead how stored products will be monitored, which product-specific limits apply under local rules and what staff do if a reading is out of range.
