Two baskets are not always two separate fryers
Two baskets can help alternate batches, but a shared tank still shares the same oil. Separate tanks may be more relevant where foods need different cooking arrangements. The useful comparison concerns independent control, usable basket space and cleaning effort, rather than the word double alone.
Two fryer tanks allow different products or separate batch schedules to run side by side. This is useful when one menu item would otherwise interrupt another item's oil routine.
