Steaming as a production stage

A cabinet may be suitable for a batch process without representing a continuous industrial line. Food depth, the required finish and the time available for loading all influence usable output. A production arrangement therefore begins with the actual food and its movement through the steaming stage.

  • Chamber Steam Recovery: High-recovery boilers with minimum 18 kW electric or 70,000 BTU gas input restore 100°C chamber saturation within 45 seconds of door closure, preventing soggy, undercooked batches.
  • Safety Door Latch Engineering: Commercial steamers operate under slight positive pressure. Specify dual-stage safety compression latches that crack the door open 15 mm on the first click to vent expanding steam upwards into the hood before full door swing.
