Large cooking equipment and the size of the load

A kettle needs a practical way to transfer its finished contents, while a large oven needs a workable tray route. The largest appliance is not necessarily the most convenient station. The useful size is one the kitchen can fill, operate and empty as part of its normal schedule.

Primary Workflow Application: Large cooking equipment is useful when the menu repeatedly needs sizeable batches. It can be inconvenient for short runs if loading, emptying and cleaning dominate the work.

  • Ergonomic Chef Hand-offs: Maintain a minimum 1050 mm to 1200 mm gangway between the hot cookline and rear preparation tables to permit safe two-way brigade movement with hot cookware.
